I really wanted a leek tart for dinner but was way too hungry to wait an hour for tart crust too refrigerate. So, I made this easy leek flatbread instead.
Easy Leek Flatbread Recipe
1 long leek, cleaned and trimmed
1 large whole wheat pita
1 tablespoon of crème fraîche
1/4 cup parmesan cheese
3/4 cup white wine or broth
Salt & pepper
1 squeeze lemon
1 knob of butter
Slice leek horizontally into 1/2 inch thick rounds. Cook leek over stove on medium heat for about 10 minutes or until tender in white wine or broth. Bring another pan to medium heat and melt butter. Bring the temperature down to low and swish the butter around the pan in an even coat. Add the pita and flip after 3 minutes.
While still in the pan, spread a layer of crème fraîche across the pita. Now add the leeks, and then sprinkle on parmesan cheese. Top it off with a pinch or two of salt & pepper and a squeeze of fresh lemon juice.
Enjoy with a big glass of sauvignon blanc, because hey, you earned it.
