Jalapeño Turkey Meatballs w/ Cucumber Dipping Sauce Recipe
Makes about 18 meatballs and plenty of dipping sauce to go around
For the meatballs...
1.25 lb ground turkey
1/2 cup minced red onion
1/4 cup bread crumbs
1/4 cup chopped cilantro
2 jalapeños, minced with seeds, core and stem removed
3 tbsp sesame seeds
1 tbsp ketchup
1 tbsp chopped fresh rosemary
1/4 tsp ground coriander
A few healthy shakes of salt and freshly ground pepper
For the cucumber sauce...
2/3 cup 2% greek yogurt
3/4 cups chopped cucumber
1 clove of garlic, chopped
1/4 tsp dried dill
1/4 tsp salt
Preheat the oven to 350° F. Place all of the meatball ingredients, except for sesame seeds, into a food processor and mix using the dough blade for 1-2 minutes. I use this one made by Cuisinart. It works like a champ. If you don't have or don't want to use a food processor, put everything into a large bowl and mix the ingredients together using your hands.
Pour the sesame seeds onto a plate and grease two baking sheets. Form the mixture into balls. I made mine a little bigger than a ping pong ball, but smaller than a golf ball. Roll each meatball over the plate of sesame seeds to lightly coat the exterior. To avoid completely coating them, I made a space on my plate that had a lighter layer of seeds by shaking it around. Place the meatballs onto the greased baking sheets and ensure that they are evenly spaced out. Bake for 25 minutes.
Prepare the cucumber sauce while the meatballs are baking. This will also be done in the food processor but using a blade attachment. A blender would also do the trick. This is again, super simple. Just throw everything in and puree it into a creamy even mixture. This will only take 1-2 minutes. Once you've spooned out the sauce, give it some glam with an extra sprinkle of dill.
Voilà, deliciousness abound! If you want to make this a balanced meal, put a few meatballs into a warm whole grain pita, and top with the cucumber sauce and a handful of shaved carrot.
