HAPPY NEW YEAR!!!
It's finally starting to look like winter here in Boston and I couldn't be happier (though that will probably change if we get hit with a snow storm). This onset of "real" winter weather has given me some serious hot chocolate cravings. This version has a rich, chocolately and coconut flavor because coconut and chocolate go ridiculously well together (Almond Joy Mounds, anyone??).
This post is also my first time using a DSLR camera. Photographer & blogger friends, I gladly welcome any feedback or tips!
Dark Chocolate & Coconut Hot Chocolate Recipe
Makes 2 delicious mug-fulls
1 can unsweetened coconut milk (light if you can find it)
1 cup milk or milk substitute
5 heaping tablespoons semi sweet chocolate chunks/chips
3 tablespoons coco powder
3 tablespoons brown sugar
1/2 teaspoon vanilla
Whipped cream for garnish
Toasted coconut pieces for garnish
Heat the coconut milk and regular milk in a sauce pan on medium heat. Whisk in the vanilla and begin adding the chocolate chips and coco powder one tablespoon at a time while whisking. Once all of the chocolate and powder has dissolved into the milk, add the brown sugar. Bring the heat up a touch so that the mixture comes to a boil and then reduce. You are ready to serve! Top each mug with a tower of whipped cream and toasted coconut. You can use regular coconut and toast it yourself in a dry pan on medium heat for a minute or two.
