It's SPRING!!! Excuse me as I crawl out from under this rock. The last two weeks in Boston have been warm and gorgeous. Every tree has burst open with blossoms and green shoots. The grass has wiggled its way out and the Common is dotted with tulips again. My only complaint is the thick layer of pollen covering my car and every other momentarily stationary surface. Allergy sufferers beware.
Spring makes me want to be healthy. I've even started doing crazy things like waking up at six in the morning to go running. This will probably all go down hill when full on summer hits. But in any case, if you are on the same vibe, here is a refreshing and energizing morning smoothie. And if you're not, sometimes fresh fruit works better than coffee, so give it a shot.

Morning Elixir Smoothie Recipe
1 cup frozen pineapple chunks
1/2 large apple chopped
2 stalks of celery cut into small ribs
1 cup spinach leaves
1 tablespoon loosely chopped fresh ginger
1 small stem's worth of fresh mint leaves
1 cup of cold water
Throw everything into the blender and blend until smooth. It should froth up really nice after about 30 seconds.
